Mini Lemon Muffins

This winter I legiterally had SO MANY LEMONS. I had boxes and buckets and bowls of lemons… So naturally my kitchen baking spree featured some tang of course. These mini lemon muffins were such a hit and I absolutely loved them! They were the perfect bite sized amount with a lemon glaze and zest to top it off. Super cute to serve and very easy to make with ingredients found in any typical kitchen! 



-1 cup flour
-1 cup sugar
-1/2 tsp salt
-1/2 tsp baking soda
-1/2 cup butter
-1/2 cup water
-1/4 cup sour cream
-1 egg
-1 tbsp lemon zest
-1 tbsp lemon juice


-1.5 cup powdered sugar
-2 tbsp lemon juice
-2 tbsp milk
-1 tsp lemon zest
-1 tbsp melted butter

-lemon zest to decorate


-Preheat oven to 325 degrees
-Add flour, sugar, salt, and baking soda to a bowl and mix
-In a small pan heat the butter until melted, then add water and bring to a boil
-add butter and water to the dry mixture
-beat with mixer but do not over mix
-add sour cream, egg, lemon zest, and lemon juice
-pour batter into greased mini muffin tins (or regular size works too)
-bake 10 to 15 mins or until golden on the edges
-let cool for five minutes and then take them out of the tins
-mix together powdered sugar, lemon juice, milk, zest, and butter
-heat slightly (microwave 10-15 seconds)
-dip, drizzle or dunk each mini muffin into the glaze and return to cooling rack
-top with lemon zest for appearance

Funny story the first time I made these they absolutely flopped. 100% tasted amazing but looked so terrible. I made them in large Teflon tins and buttered them super well. What I didn’t realize was my Teflon had started to flake off, so the tin itself was pretty jagged and rough. This made the batter stick to it so well I had to use a paring knife to try to gouge my muffins out! They didn’t come out clean at all. I bought new tins and restarted, they turned out beautifully and made for a perfect mid-morning snack! 

For this recipe, I personally like the minis opposed to regular sized muffins, they’re super fun and a perfect sized eat. It is wayyyy too easy to overeat from this recipe! I could eat a whole pan if my taste buds were in charge! It’s the right amount of lemon to add to your routine.
